Ingredients

  • 1/4 cup peeled tigernuts
  • 2 tsp coriander seeds
  • 2 tsp cumin seeds
  • 1.5 tbsp sesame seeds
  • 1 tsp dried oregano
  • 1/2 tsp dried chilli flakes
  • 1/4 tsp ground turmeric
  • Pinch good quality salt
  • Pinch black pepper

Instructions

  • In a blender, good quality spice grinder or food processor pulse tigernuts to resemble fine bread crumbs. Set aside. 
  • Toast coriander and cumin seeds in a dry frying pan until fragrant. Allow to cool. 
  • Toast sesame seeds in a dry frying pan until lightly coloured. Allow to cool. 
  • Add coriander and cumin seeds to blender/spice grinder and pulse to grind. 
  • In a small mixing bowl combine ground tigernuts, spices, sesame seeds, oregano, chilli flakes, turmeric, salt and pepper. Store in an air-tight container. 

Notes

Recipe Tips:
  • For added crunch and a toasted flavour you can lightly toast the peeled tigernuts in a dry frying pan (watch they don’t burn). Allow to completely cool before grinding.
