These soft little bites are made with just a handful of ingredients and go perfectly with a cuppa!

Ingredients

Instructions

  • Pre-heat fan-forced oven to 180C. 
  • Steam pumpkin.Drain well and whilst allowing to cool. (Not refrigerated*) Then mash well to puree. 
  • In a mixing bowl combine pumpkin puree with coconut oil. 
  • Add almond meal, baking powder and vanilla powder and mix to combine well. 
  • Using clean hands shape tablespoon portions of mixture into cookie shapes and place on a lined baking tray. 
  • Bake in oven for 25 minutes or until edges begin to turn golden. 

Notes

Make It Personal:
  • If you prefer your cookie a little sweeter you can add a dash of pure maple syrup or a few drops of liquid stevia concentrate.
  • If you prefer a firmer cookie add additional almond meal - up to 3 cups total.
  • Press seeds or nuts into unbaked cookies for fun decoration and added crunch.
Recipe Tips:
  • You can cook your pumpkin puree in advance (with dinner the night before for example) for even quicker cookies! *Just make sure you allow pumpkin to return to room temperate and not straight from the fridge as it will solidify your coconut oil before combined.
