Berry Nice Cream Antioxidant Bowl
A simple, creamy and healthy treat rich in antioxidants and made with just 3 ingredients. Typically 'nice cream' is made by blending frozen bananas to a creamy ice-cream like texture but to reduce the natural sugars in this recipe I omit banana and instead opt for antioxidant rich berries. It makes a delicious flavour combo of sweet and and semi-tart to make your taste buds zing! If you have an extra sweet tooth check out the 'make it personal' tips below.
To boost the antioxidant and vitamin C power of this treat you can add a teaspoon of the Aussie superfood Kakadu Plum Powder (a rich source of vitamin C).

Antioxidants protect your body from oxidative damage (what causes ageing) and help to reduce inflammation (an underlying factor contributing to many diseases such as heart disease, diabetes and even cancer).
- Berries are considered a low sugar fruit and a great option to enjoy natural sweetness along with their health benefits without impacting your blood sugar levels or influencing sweet cravings.
- Berries are also known as 'brain foods' that improve memory and focus.
- Vitamin C is a powerful nutrient that fights free radical damage, boosts immunity, improves mineral absorption, promotes healthy glowing skin and collagen formation, improves gum health and is important for eye health as well as heart health also. Recipe:
Berry Nice Cream Antioxidant Bowl
Ingredients:
- 1/2 cup (70g) frozen blueberries
- 1/2 cup (70g) frozen raspberries
- 1/3 cup (80ml) full fat premium coconut milk (BPA free)
- 1/4 tsp organic vanilla powder (optional)
- 1 tsp kakadu plum powder (optional)
Optional Toppings:
- Chia seeds (adds protein, fibre and omegas)
- Buckinis
- Organic coconut flakes
- Diced tigernuts
- Chopped nuts
- Pumpkin seeds (pepitas)
- Cacao nibs
- Extra sprinkle of kakadu plum powder
Method:
- In a blender (I use a Vitamix) mix ingredients until smooth and creamy (scrape down sides regularly). Add a touch more coconut milk to help blend if needed. Also starting on a slow speed then building to a faster speed helps.
- Serve immediately and sprinkle with favourite toppings.
Make It Personal:
- If you have a sweet tooth you can add 1/2 frozen banana before blending or add drizzle of maple syrup/natural sweetener.
- Add 1/2-1 tsp maca powder for hormonal and energy support.
Recipe Tips:
- This recipe is best served straight away. Alternatively if you make in advance, freeze and remove from freezer 5 minutes before serving.
