Nourish 101:

  • Pecans are a great source of energy, B-vitamins and minerals.

  • Pecans also contain great amounts of flavonoids that function as antioxidants and have an anti-inflammatory effect on your body.

  • The healthy fats found in nuts like pecans are known to help promote healthy cholesterol levels.

  • Because of their healthy fat content, pecans help you feel fuller for longer and help to prevent sweet cravings.

  • Cinnamon helps to prevent sugar cravings.

Cinnamon and Maple Glazed Pecans

  • 2 cups Pecan Halves
  • 1 tbsp Extra Virgin Coconut Oil, melted
  • 2 tsp Pure Maple Syrup
  • 1 tsp Vanilla Powder
  • 1 tsp Ground Cinnamon

  1. In a mixing bowl combine pecans with coconut oil and maple syrup. Toss to coat well.
  2. Add vanilla and cinnamon and toss to coat well.
  3. Heat frying pan over low-medium heat. Add pecans and agitate pan regularly. Toast for 3 - 4 minutes or until pecans are fragrant and lightly toasted.
  4. Allow to completely cool. Store in an air-tight container.

Serving Suggestions:

  • Serve as is as a great snack or nibble or crush for a fun and crunchy topping over sweets such as coconut yoghurt or fruit salad.

Make It Personal:

  • You can also make this recipe entirely (natural) sugar free by omitting maple syrup. The delicate and natural sweetness of pecans and coconut oil might just be enough to satisfy.

Recipe Tips:

  • The pecans will only take a short time to toast in a heated fry pan so be careful not to burn.
  • Using 'extra virgin' coconut oil vs standard coconut oil will give your pecans a subtle and delicious coconut flavour.
