Cinnamon and Maple Glazed Pecans

The festive season sure has arrived and to kick off our 12 days of healthy Christmas recipes let us start with a super simple recipe for a great snack or to serve as festive nibbles. 

The flavours of pecan, vanilla and cinnamon will fill the air with Christmas scent when you make these delicious and crunchy maple and cinnamon glazed pecans.

Make these for holiday snacks, nibbles for Christmas day or even give as gifts in a decorated jar. If you have children these make popular, healthy Christmas gifts for the teachers!

With a hint of maple syrup these crunchy pecans will satisfy your festive sweet tooth without over-doing it. (You can also opt to omit maple syrup too.)

  • Pecans also contain great amounts of flavonoids that function as antioxidants and have an anti-inflammatory effect on your body.

Recipe:

Cinnamon and Maple Glazed Pecans

Ingredients:

  • 2 cups Pecan Halves 
  • 1 tbsp Extra Virgin Coconut Oil, melted
  • 2 tsp Pure Maple Syrup
  • 1 tsp Vanilla Powder
  • 1 tsp Ground Cinnamon

Method:

  1. In a mixing bowl combine pecans with coconut oil and maple syrup. Toss to coat well. 
  2. Add vanilla and cinnamon and toss to coat well.
  3. Heat frying pan over low-medium heat. Add pecans and agitate pan regularly. Toast for 3 - 4 minutes or until pecans are fragrant and lightly toasted.
  4. Allow to completely cool. Store in an air-tight container.

Serving Suggestions:

  • Serve as is as a great snack or nibble or crush for a fun and crunchy topping over sweets such as coconut yoghurt or fruit salad.

Make It Personal:

  • You can also make this recipe entirely (natural) sugar free by omitting maple syrup. The delicate and natural sweetness of pecans and coconut oil might just be enough to satisfy.

Recipe Tips:

  • The pecans will only take a short time to toast in a heated fry pan so be careful not to burn. 
  • Using 'extra virgin' coconut oil vs standard coconut oil will give your pecans a subtle and delicious coconut flavour.
