Nourish 101:

  • With no added sweeteners at all, this clean recipe is the perfect no-guilt treat made with nourishing whole food ingredients.
  • Suitable for those with food sensitivity to gluten, grains, dairy, soy and eggs.
  • Vegan friendly.
  • Source of fibre: apples are a great source of fibre promoting a healthy digestive system and add a natural sweetness without added sugar to this recipe.
  • Satisfying ingredients: the crumble adds a source of healthy fat and protein helping you to feel sustained for longer whilst reducing the impact of the apple's natural sugar on your blood sugar levels.
  • Ingredients to prevent sugar cravings: cinnamon along with the healthy fat sources (almonds, coconut oil & coconut) helps to balance sugar levels preventing sweet cravings.

Apple Crumble Parfaits

  • 2 large green apples, peeled, thinly sliced
  • 1 tsp coconut oil
  • 1/2 tsp cinnamon
  • pinch nutmeg
  • 150g coconut yoghurt (I use COYO)*

  • 1/2 cup almond meal (60mg)
  • 1/2 cup organic desiccated coconut (45g)
  • 1 TBSP coconut oil (20ml)
  • 1 TBSP almond butter (20g)
  • 1/2 tsp vanilla powder
  • 1/2 tsp cinnamon
  • pinch nutmeg
  • 2 TBSP flaked or slivered almonds (20g)

  1. Begin by making crumble - pre-heat fan-forced oven to 170'C. Melt coconut oil with almond butter in a small saucepan.
  2. In a mixing bowl combine almond meal, coconut, vanilla, cinnamon and nutmeg and pour in melted oil/almond butter. Combine well. Stir through flaked almonds.
  3. Spread crumble onto a baking tray and bake for 10-12 minutes or until golden. (Check half way to prevent burning).
  4. Meanwhile melt coconut oil in a small saucepan, add apples, cinnamon and nutmeg. Cook over low-medium heat and stir frequently until apples are softened.
  5. Assemble parfaits in glasses with layers of apple, yoghurt and crumble and repeat.
  6. Serve warm or place in fridge to chill.

Personal this recipe:

  • If you have a sweet tooth you can add a touch of natural sweetener to your crumble (such as coconut sugar, maple syrup, rice malt syrup or raw honey).
  • Use chopped macadamia nuts or walnuts in place of flaked almonds.

Recipe Tips:

  • Choose a plant-based sugar free yoghurt.
