Grain Free Morning Tea Loaf

For morning tea many enjoy a muffin, cake, biscuit or sweet baked treat but lots of these items typically contain high amounts of sugar (as well as gluten and often dairy also). 

We’ve come up with a healthy alternative with our recipe for morning tea loaf which contains no added sweeteners and is gluten free, grain free, dairy free and preservative free. 

This yummy spiced morning tea loaf is naturally sweetened with the the juice from the orange as well as the fresh apple so no added sweeteners are needed.

Nutrition 101:

  • This gluten free, grain free loaf provides a well-balanced snack or treat containing nutritional benefits. 
  • Without added sweeteners, this loaf uses the natural sweetness from the orange and apple. 
  • The combination of almond meal and coconut milk adds a balance of beneficial fats and help to make this loaf satisfying. 
  • Almonds also contain vitamin E and minerals. 
  • The eggs also add protein to this loaf again helping to keep you satisfied and fuller for longer. 
  • Apples contain antioxidants called flavonoids. They are also high in fibre for a healthy digestive system. 

Recipe:

Grain Free Morning Tea Loaf

Ingredients:

  • 3 Free Range Eggs
  • 1/4 cup Coconut Milk 
  • Zest of 2 Oranges
  • 1/2 cup Orange Juice (Juice of 1 Orange) 
  • 2 cups Almond Meal 
  • 4 tablespoons Organic Tapioca Flour 
  • 1 teaspoon Gluten Free Baking Powder
  • 2 teaspoons Vanilla Powder
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Allspice
  • Pinch Pink Salt 
  • 1 large Red Apple, finely diced (I used Red Gala apples)

Method:

  1. Pre-heat fan-forced oven to 180°C. 
  2. In a medium mixing bowl whisk eggs with coconut milk, orange juice and zest. 
  3. Add almond meal, tapioca flour, baking powder, vanilla powder, cinnamon, nutmeg, allspice and a pinch of salt. Combine well. 
  4. Fold through diced apple. 
  5. Spoon batter into a square deep slice tin.
  6. Bake in pre-heated oven for 35-45 minutes or until cooked through. 
  7. Allow to cool. 

Make It Personal:

  • We like to stick to natural sweetness found in the orange and apple for this recipe but if you like to add a hint of extra sweetness you can add a little raw honey, pure maple syrup or sweetener of choice. 

Recipe Tips:

  • You can also bake your mixture in lined muffin trays to make approx 10- 12 muffins.

Sensitive to FODMAPs? 
  • If you can tolerate almonds make this recipe fodmap friendly by omitting diced apple and substitute for blueberries, chopped strawberries or another low fodmap fruit of choice.
