Lemon Myrtle Roasted Macadamias

Servings 1 cup

Ingredients

  • 1 cup raw macadamias
  • 1 tsp extra virgin olive oil
  • 2 tsp Lemon juice
  • 3 tsp dried lemon myrtle (I used Kakadu Plum Lemon Myrtle)
  • Zest of 1 lemon
  • Pinch cayenne pepper or ground chilli
  • Pinch good quality salt

Instructions

  • Pre-heat oven to 160°C. 
  • In a mixing bowl toss macadamia nuts with olive oil and lemon juice to coat evenly. 
  • Add lemon myrtle, lemon zest, cayenne pepper and salt. Toss to evenly coat. 
  • Spread onto a lined baking tray and roast in oven for 10 minutes (checking and agitating after 5 minutes) or until lightly golden. Allow to cool. 
  • Store in an air-tight container.
