Lemon Myrtle Roasted Macadamias

Roasted macadamias flavoured with the Australian native bush food, lemon myrtle. The robust lemony flavour is the perfect flavour to partner with the buttery Australian macadamias. Enjoy as a simple and healthy sugar free snack or chop and sprinkle over salads or your favourite savoury dishes.

Recipe:

Lemon Myrtle Roasted Macadamias 

Ingredients:

  • 1 cup raw macadamias 
  • 1 tsp olive oil (or melted coconut oil)
  • 2 tsp fresh lemon juice 
  • 3 tsp dried lemon myrtle (I used Kakadu Plum Lemon Myrtle)  
  • Zest of 1 lemon
  • Pinch cayenne pepper or ground chilli 
  • Pinch good quality salt

    Method:

    1. Pre-heat oven to 160°C.
    2. In a mixing bowl toss macadamia nuts with olive oil and lemon juice to coat evenly. 
    3. Add lemon myrtle, lemon zest, cayenne pepper and salt. Toss to evenly coat. 
    4. Spread onto a lined baking tray and roast in oven for 10 minutes (checking and agitating after 5 minutes) or until lightly golden. Allow to cool. Store in an air-tight container.
