A simple, creamy and healthy treat rich in antioxidants and made with just 3 ingredients. Typically 'nice cream' is made by blending frozen bananas to a creamy ice-cream like texture but to reduce the natural sugars in this recipe I omit banana and instead opt for antioxidant rich berries. It makes a delicious flavour combo of sweet and and semi-tart to make your taste buds zing! If you have an extra sweet tooth check out the 'make it personal' tips below.To boost the antioxidant and vitamin C power of this treat you can add a teaspoon of the Aussie superfood Kakadu Plum Powder (a rich source of vitamin C).
In a blender (I use a Vitamix) mix ingredients until smooth and creamy (scrape down sides regularly). Add a touch more coconut milk to help blend if needed. Also starting on a slow speed then building to a faster speed helps.
Serve immediately and sprinkle with favourite toppings.
Make It Personal:
If you have a sweet tooth you can add 1/2 frozen banana before blending or add drizzle of maple syrup/natural sweetener.
Add 1/2-1 tsp maca powder for hormonal and energy support.
This recipe is best served straight away. Alternatively if you make in advance, freeze and remove from freezer 5 minutes before serving.
