Grain Free Morning Tea Loaf

For morning tea many enjoy a muffin, cake, biscuit or sweet baked treat but lots of these items typically contain high amounts of sugar (as well as gluten and often dairy also).

Ingredients

  • 3 Free Range Eggs
  • 1/4 cup Coconut Milk
  • Zest of 2 Oranges
  • 1/2 cup Orange Juice (Juice of 1 Orange)
  • 2 cups Almond Meal
  • 4 tablespoon OrganicTapioca Flour
  • 1 teaspoon baking powder
  • 2 teaspoon vanilla bean powder (or good quality vanilla extract)
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Allspice
  • Pinch sea salt
  • 1 large Red Apple, finely diced (I used Red Gala apples)

Instructions

  • Pre-heat fan-forced oven to 180°C. 
  • In a medium mixing bowl whisk eggs with coconut milk, orange juice and zest. 
  • Add almond meal, tapioca flour, baking powder, vanilla powder, cinnamon, nutmeg, allspice and a pinch of salt. Combine well. 
  • Fold through diced apple. 
  • Spoon batter into a square deep slice tin. 
  • Bake in pre-heated oven for 35-45 minutes or until cooked through. 
  • Allow to cool. 

Notes

Make It Personal:
  • We like to stick to natural sweetness found in the orange and apple for this recipe but if you like to add a hint of extra sweetness you can add a
    little raw honey, pure maple syrup or sweetener of choice.
Recipe Tips:
  • You can also bake your mixture in lined muffin trays to make approx 10- 12 muffins.
Sensitive to FODMAPs?
  • If you can tolerate almonds make this recipe fodmap friendly by omitting diced apple and substitute for blueberries, chopped strawberries or another low fodmap fruit of choice.
