For morning tea many enjoy a muffin, cake, biscuit or sweet baked treat but lots of these items typically contain high amounts of sugar (as well as gluten and often dairy also).
1 large Red Apple, finely diced (I used Red Gala apples)
Instructions
Pre-heat fan-forced oven to 180°C.
In a medium mixing bowl whisk eggs with coconut milk, orange juice and zest.
Add almond meal, tapioca flour, baking powder, vanilla powder, cinnamon, nutmeg, allspice and a pinch of salt. Combine well.
Fold through diced apple.
Spoon batter into a square deep slice tin.
Bake in pre-heated oven for 35-45 minutes or until cooked through.
Allow to cool.

Make It Personal:
We like to stick to natural sweetness found in the orange and apple for this recipe but if you like to add a hint of extra sweetness you can add a little raw honey, pure maple syrup or sweetener of choice.
Recipe Tips:
You can also bake your mixture in lined muffin trays to make approx 10- 12 muffins.
Sensitive to FODMAPs?
If you can tolerate almonds make this recipe fodmap friendly by omitting diced apple and substitute for blueberries, chopped strawberries or another low fodmap fruit of choice.
