Lemon Myrtle Roasted Macadamias

1 cup raw macadamias 1 tsp extra virgin olive oil 2 tsp Lemon juice 3 tsp dried lemon myrtle (I used Kakadu Plum Lemon Myrtle ) Zest of 1 lemon Pinch cayenne pepper or ground chilli Pinch good quality salt
Pre-heat oven to 160°C.
In a mixing bowl toss macadamia nuts with olive oil and lemon juice to coat evenly.
Add lemon myrtle, lemon zest, cayenne pepper and salt. Toss to evenly coat.
Spread onto a lined baking tray and roast in oven for 10 minutes (checking and agitating after 5 minutes) or until lightly golden. Allow to cool.
Store in an air-tight container.
