A delicious twist on dukkah, supercharged with health-boosting ingredients including tigernuts, herbs and spices. Perfect to add flavour and texture to your favourite savoury dishes. Sprinkle over vegetables, salads, avocado, dips or chicken/fish. What are tigernuts? A tiny tube (aka root vegetable) that's actually not a nut and taste like "chewy coconut and almond".
In a blender, good quality spice grinder or food processor pulse tigernuts to resemble fine bread crumbs. Set aside.
Toast coriander and cumin seeds in a dry frying pan until fragrant. Allow to cool.
Toast sesame seeds in a dry frying pan until lightly coloured. Allow to cool.
Add coriander and cumin seeds to blender/spice grinder and pulse to grind.
In a small mixing bowl combine ground tigernuts, spices, sesame seeds, oregano, chilli flakes, turmeric, salt and pepper. Store in an air-tight container.

Recipe Tips:
For added crunch and a toasted flavour you can lightly toast the peeled tigernuts in a dry frying pan (watch they don’t burn). Allow to completely cool before grinding.
