Beef Burrito Bowl
Made with fresh Mexican flavours and tender Australian beef, my healthy beef burrito bowl is a fresh recipe that satisfies and nourishes.
Using real food ingredients, the recipe is free from grains/gluten, sugar, dairy and preservatives.

Ingredients
Filling

gravy beef, cut into 2-3cm cubes

extra virgin olive oil

garlic

crushed tomatoes

beef broth/stock
1
cup
cooked quinoa/ brown rice

iceberg lettuce, shredded
Fresh coriander leaves, to garnish
Salsa
1
cup
cherry tomatoes, quartered
1/4 red onion, finely diced
Juice of 1 lime
1/2
cup
fresh coriander, chopped
Guacamole

Juice of 1 lime

Instructions
In a large, deep casserole pot heat oil over medium heat. Add garlic and spices, stir for 1 minute. Add beef and brown for 3-4 minutes.
Add crushed tomatoes and stock and bring to a boil. Reduce heat to simmer, cover and cook for 1.5 hours or until beef is tender.
In final 15 minutes of beef cooking time, prepare fresh ingredients for the salsa, guacamole and shred the lettuce. Cook quinoa/brown rice.
Prepare salsa by combining all ingredients together. Set aside.
Prepare guacamole by mixing all ingredients well together. Set aside.
Once meat is tender, use a fork to roughly mix and shred beef.
Assemble your burrito bowls with a layer of quinoa/brown rice and top with shredded lettuce. Add beef and top with salsa and guacamole.
Finish with fresh coriander to garnish.
