Shepherd's Pie with Spinach and Sweet Potato Mash

Shepherd's pie is such a satisfying family friendly meal. Here is our recipe for shepherd's pie with a boost of green goodness from spinach and using sweet
potato mash instead of regular potato mash for the topping.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large Onion, finely diced
  • 4 Cloves Garlic , crushed
  • 2 medium Carrots, finely diced
  • 2 Celery Sticks, finely diced
  • 500 g good quality Lamb Mince
  • 1 tablespoon organicTomato Paste
  • 400 g organicCrushed Tomatoes
  • 250ml stock/ broth
  • 4 sprigs Fresh Rosemary
  • 1 cup Frozen Spinach, defrosted
  • 4 cups peeled and diced Sweet Potato
  • Pinch Sea salt and black pepper
  • garlic infused extra virgin olive oil  

Instructions

  • In a large saucepan sauté onion, garlic, carrot, and celery in olive oil until softened. 
  • Add mince and brown for 10 minutes. Spoon out any excess liquid. 
  • Add tomato paste and stir. 
  • Add tomatoes, stock/broth, rosemary, salt and pepper and bring to a boil. 
  • Reduce to a simmer uncovered for 25 minutes or until liquid has reduced. 
  • Meanwhile, pre-heat fan-forced oven to 200ºC. 
  • Boil or steam sweet potato for 10 minutes or until tender. Drain well. 
  • Mash sweet potato with a pinch of salt and pepper. 
  • Add spinach to mince filling and stir. 
  • Spoon mince into a large ovenproof baking dish. 
  • Top with mashed sweet potato using a fork to spread evenly. Drizzle lightly with olive oil. 
  • Cook in oven for 20-25 minutes or until sweet potato edges are golden. 

Notes

Serving Suggestions:
  • Serve with a side of cooked greens such as steamed green beans, peas or broccoli.
Make It Personal:
  • Add thyme to your filling.
  • Add fresh parsley or chopped chives to your sweet potato mash.
  • Instead of sweet potato mash you could also top your pie with cauliflower mash.
Recipe Tips:
  • By reducing the liquid on the stove the flavour of your filling will intensify.
  • Instead of frozen spinach you could also use shredded silverbeet.
  • Simply add in at same time as stock.
  • Use good quality lamb mince for your filling.
Sensitive to FODMAPs?
  • Omit onion and garlic and use garlic infused olive oil.
  • Omit celery.
  • Use a low FODMAP bone broth. I use Gevity Rx Bone Broth Concentrate for low FODMAP broth/stock. 
  • Stick to 1/2 cup sweet potato per serve or swap out for Jap pumpkin mash. 
Sensitive to Tomatoes?
  • Omit tomato paste and substitute crushed tomatoes with additional 1 cup stock.
  • Add additional herbs to boost flavour.
  • You could also add some finely chopped pumpkin in with stock to add flavour and texture.
