One-Pan Healthy Baked Pancake

A quick, easy and healthy pancake recipe. Gluten free, dairy free and refined sugar free.

Ingredients

  • 3 free range eggs
  • 3 tbsp pure maple syrup or liquid natural sweetner of choice
  • 1 tsp vanilla extra or vanilla powder
  • 1 cup almond meal
  • 1/2 tsp baking powder

Toppings of Choice

  • fresh berries
  • fresh fruit
  • coconut cream whipped
  • yoghurt of choice
  • maple syrup or honey or coconut nectar

Instructions

  • Pre-heat oven to 170°C. 
  • In a bowl whisk eggs with maple syrup and vanilla. 
  • Add almond meal and baking powder and combine.
  • Pour into a lightly greased oven-safe frying pan.
  • Bake for 15 minutes or until cooked through.
  • Allow to slightly cool and serve with your choice of toppings.
